Another month is behind us and we are officially half way through 2011! June brings us the good, bad and the ugly (in no specific order): the bitter cold, lunar eclipse, the planets that lit & lined up the dawn sky; and tragically the total number of deaths from an outbreak of enterohaemorrhagic E.coli (strain EHEC-0104) in vegetable sprouts to 38 in Germany.

This month’s CLEANING edition will reiterate and facilitate our obligation to keep our kitchens, factories and plants CLEAN! The outbreak of one our WORST BUGS in a first world country, where the farm that was implicated had, according to regional farm minister Gert Lindemann, ”done nothing wrong ...it has high hygiene standards," corroborates our need to maintain correct cleaning procedures and practices here in South Africa. Move aside KEEP IT GREEN, us Foodies need to KEEP it CLEAN!

Some cleaning tips….

• Allergen control – our brushware is available in 7 colours (red, blue, green, yellow, black, white and orange) – the Orange range of cleaning equipment has been the most recent colour added into the range and we have had very positive feedback on this colour as most of our customers have been used to using 6 colours so when orange was launched it allowed the factories to use Orange for their allergen control programme (we also have orange scoops & buckets available and these items can be used in the ingredient / dry store rooms for weighing ingredients).

• Regarding the durability of cleaning equipment, especially in factories that clean their equipment with very aggressive material (such as caustic) it is important that cleaning equipment is very durable and made from a good quality raw material such as solid block of polypropylene – this will result in the tools being longer lasting.

• When implementing a cleaning programme, it is important to have a good quality cleaning chemical but as important to have a good quality brush – as these 2 items compliment each other. If you have a good quality chemical but an inferior brush to clean with you will end up using more chemical to clean/scrub but if you have a good brush and an inferior chemical then the brush will be required to do all the work and this will shorten the life span of the brush – it is very important to find a good balance between the 2.

• In high risk factories being able to clean your cleaning equipment effectively is very important as dirty cleaning equipment is a serious contamination issue – the Vikan Hygiene systems brushware can be autoclaved.

• It is also interesting to know that the Vikan Hygiene Systems brush ware is resistant to greases and oils and is used by companies that clean up accidental spills.

31 May – 2 June 2011: This year’s three day annual conference was held at Emperors Palace in Gauteng . This premier poultry event in Africa let exhibitors demonstrate their latest products, technology and skills. Specialised speakers from a range of fields complemented by parallel sessions catering for emerging poultry farmers’ needs, as well as specialist technical/ veterinary subjects, brought all its visitors a wealth of insight and knowledge into poultry field.

A special thank you to Yolanda Roetz of Sandveld Saagmeule (Sandveld Shavings) for her support and assistance during the exhibition.

14 June 2011: TFSN held its first Consumer Protection Act Workshop in Johannesburg this month. It was greatly received by the over 30 delegates, although some left a little paler than when they arrived after they were told by Janusz Luterek (Hahn & Hahn Attorneys) that this is the mother of all acts to protect the consumer, so they had better get their companies up to scratch with the requirements.

Exercise your right - complain...

I had the unfortunate experience of finding a foreign body in a breakfast I had recently at a well known restaurant chain outlet….nameless of course. It looked like hair. The manager/owner of the restaurant was quick to defend the foreign object as fibre not human hair. The object was located in the mushrooms served as part of my breakfast. I was told that this had happened before and that head office had had the fibre tested to confirm that it was not human hair. Needless to say I was still not happy as this simply indicated that the mushrooms had not been washed prior to cooking. The point is I complained. How often do you complain about poor service or poor quality food products? Just because we are in the industry does not mean we should turn a blind eye to food safety issues. In fact we should be more vigilant and pro-active in complaining as you are aware of the controls that should be in place to prevent many of these problems. Don’t forget you are a consumer too – and one who knows that food safety should be taken seriously.
